Paleo Chai Pumpkin Bread

This recipe comes from my good friend, and health-nut, Rachel Cline! She’s a senior here at SMU and a member of the SMU Equestrian team. She’s incredibly talented, exceptionally motivated, and cares a lot about personal health and fitness. So naturally, during a time of year filled with Halloween candy and carmel-covered apples, I figured it would be nice to have a healthy fall recipe up on the blog!

I’ve heard of the Paleo diet, but I honestly didn’t know much about it when Rachel told me about it. Essentially, the Paleo dietary template is based on the notion that for optimal health, modern humans should eat in a way our hunter-gatherer ancestors did. There are two simple guidelines:

  • Eat whole, unprocessed, nutrient-dense, nourishing foods.Prioritize grass fed and pastured meats and eggs, wild-caught seafood, and vegetables. Enjoy fruit, nuts, and seeds in moderation.
  • Avoid foods that will harm us by causing systemic inflammation, wrecking our guts, or derailing our natural metabolic processes. Abstain from toxic, pro-inflammatory foods like gluten-containing grains, legumes, sugar, and the laboratory-concocted Frankenfoods found in the middle aisles of your neighborhood supermarket.

I was surprised as to how delicious this pumpkin bread actually tasted! I can’t keep up with Rachel’s impressive crazy diet and workout plans, I like me some carbs. But! This is a quick and easy recipe, and it’s good for you! I’m a big believer in balance – You should take the effort to be healthy so on those days where you just need a Ranch-Hand Burger from Twisted Root (burger, bacon, swiss cheese) and a side of their unreal fried pickles… it’s okay.

Paleo Chai Pumpkin Bread: Cook and Prep Time – 50 minutes

Ingredients:

  • 1 cup almond butter (or other nut butter or seed butter)
  • ½ cup pumpkin puree
  • 1 banana, mashed
  • ¼ cup honey
  • 2 eggs, whisked
  • 2 chai tea packets (tea spices removed from packets)
  • 3 tablespoons coconut flour (or almond flour)
  • ½ tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ground ginger
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • Pinch of salt

Instructions:

  • Preheat oven to 350 degrees.
  • Mix together almond butter, pumpkin, banana, and eggs.
  • Cut open the two tea bags and remove all the tea spices from the tea bags and add to almond butter mixture.
  • Add the rest of the ingredients and mix until well combined.
  • Grease a bread pan and then line it with parchment paper.
  • Pour batter in pan and place in oven. Bake for 45 minutes. Let rest before slicing.
